Beef Pot Pie Soup

Ingredients:

1 box Pillsbury Refrigerated Pie Crusts, thawed
2 Tbsp olive oil
1 1/2 lb beef stew meat, cut small
3 Tbsp unsalted butter
1/2 yellow onion, diced
3 celery stalks, sliced
1 large potato, peeled and diced small
1 cup beef broth
2 cup milk
1/4 tsp crushed red pepper flakes
1 tsp kosher salt
1/2 tsp black pepper
1 package (.87oz) McCormick Brown Gravy Mix
1 cup shredded White Cheddar Cheese (I use Cabot)
1 tsp dried (or fresh) parsley

Directions:
