Clean No Bake Pumpkin Pie

Ingredients:

Crust:

2 cups pecans or almonds (I used pecans)
1/2 cup quick oats
10 Medjool dates, pitted
1 tsp pure vanilla extract
1 tsp cinnamon
1/4 tsp salt

Filling:

1 + 1/4 cups cashews
2 cups (15 oz can) pumpkin puree (not pumpkin pie filling)
1 small ripe or over ripen banana (very yellow is good enough)
1/4 cup maple syrup or honey (I prefer maple syrup)
1 tsp pure vanilla extract
1 tbsp pumpkin pie spice
1/4 tsp salt

Topping:

2 tbsp chocolate chips (I used Enjoy Life)
1/2 tsp coconut oil
