1/2 cup granulated sugar
1/2 stick (4 ounces) unsalted butter
3 tablespoons fresh lemon juice
2 teaspoons cornstarch
1/8 teaspoon kosher salt

Meringue:

4 large egg whites, room temperature
pinch of salt
1 cup granulated sugar
1 teaspoon vanilla bean paste (or 3/4 teaspoon pure vanilla extract)
2 teaspoons cornstarch
1 teaspoon distilled white vinegar

Vanilla Whipped Cream:

1 cup heavy whipped cream, cold
1 teaspoon vanilla bean paste (or 3/4 teaspoon pure vanilla extract)
1 and 1/2 cups fresh raspberries, for garnish
