Ingredients

  • 8 slices thick cut applewood smoked bacon
  • 4 eggs
  • 4 slices lamb chopper cheese ( or any other soft-hard cheese ex. cheddar, gouda, provolone)
  • 1 heirloom tomato, sliced
  • 1 avocado, thinly sliced
  • 4 leaves of butter leaf lettuce
  • Basil mayonnaise, as needed
  • 8 slices of hearty artisan bread (ex. rosemary, sourdough)
  • Salt and pepper, as needed
  • Basil Mayonnaise:
  • 1 egg yolk
  • 1/2 teaspoon mustard (dijon or yellow)
  • 1 cup canola or vegetable oil
  • 1 tablespoon water
  • Salt and pepper, as needed
  • chili powder (optional)
  • lemon juice (optional)
  • 6 basil leaves chiffonade
