1.5lb/750g potatoes, peeled and cut into 2"/5cm pieces
3 carrots, peeled and cut into 2"/5cm pieces
2 red onions, each cut into 8 wedges
2 tbsp olive oil
2 tsp dried thyme
1 tsp dried oregano
Salt and pepper
1 - 1.4lb/500 - 700g sausages (your choice)
2 tbsp butter
1½ tbsp plain flour
2 cups chicken broth/stock
¾ cup water, plus more as required
Fresh thyme, for garnish (optional)
